Crudo Bar Line Cook:

Crudo & Cotto restaurant is seeking one Line Cook for our Crudo Bar, to work Wednesday through Saturday from 2:30pm - close (usually around 9:30pm) and Sundays for brunch from 9am - close (approximately 3pm). This person will primarily work the crudo bar (although cross training in positions will definitely occur), making salads, raw and smoked fish dishes, carpaccios, and shucking oysters. They will also assist with prep for both the Crudo Bar and other positions, and occasionally move to the hot line to assist the Kitchen Manager in busy times. There will be days when this person will also need to help with dishwashing.

Required Qualifications:

-At least one year of experience in pantry or on the line; some experience working in a scratch kitchen.

-Excellent knife skills, and confidence slicing fish.

-Speed and accuracy when shucking oysters

-Able to work independently, and use time wisely, i.e. getting ahead on prep or cleaning during quiet moments.

-Able to stay calm and cool under pressure during busier moments.

-Proven strength working and communicating within a team.

-Curiosity and a willingness to learn new techniques and cuisines.

-Must be able to climb stairs (our restaurant is on two different floors), stand for long periods of time, and lift up to forty pounds.

Helpful, but not required:

-Experience working with sushi or other crudo preparations.

-Knowledge of the Italian language.

This position pays $17-$19/ hour D.O.E. plus a percentage of the Service Charge paid out as a Bonus on top of wages. Additionally, Crudo & Cotto offers one week of vacation pay after 1 year of employment, and Medical Benefits to all employees who work 22.5 hours or more per week after 60 days of employment. Additionally, we offer 1.5 hours of sick leave for every 40 hours worked (50% more than required by WA State).
